While at Delfina Foundation in 2016 as part of season 3 of The Politics of Food, writer Chris Fite-Wassilak produced an essay that reflected on memory and authenticity through his experiences of two cheeses: Gour Noir an artisanal goats’ cheese produced by Veronique and Christian Arnaud, old anarcho-syndicalist 68ers; and Provel, pasteurised processed cheddar, Swiss and provolone cheese, ideal for sandwiches and pizza-burgers’ a speciality of St Louis, Missouri.
